These researchers at the University of Missouri have begun adding elements such as fiber, antioxidants, and probiotics (bacteria that help digestion) to ice cream, to make it a healthy food.
“Our main challenges are texture, taste, and psychological adherence,” says Ingolf Gruen, professor of food chemistry at the University of Missouri, project leader, in a statement. “The nutrients we add often have a bitter taste and affect the texture of the ice, and we have to hide them,” he adds.
According to Ingolf Gruen, powerful flavors like chocolate mask the taste of nutrients.
Among the nutrients that could be added to ice cream, probiotics and fiber help with digestion. Probiotics fight inflammation of the small intestine, sometimes responsible for diseases.
Researchers also plan to add acai, a berry with antioxidant properties, or grapes from pressing, in wine companies.
According to researchers at the University of Missouri, a prototype ice cream good for health could appear in six months.
